These popsicles are super simple – the base is just strawberries, coconut milk, almond milk, and a little bit of whatever sweetener you’d like and then there are the mochi bits dropped in. A while ago I discovered that mochi is made from sweet rice flour (also called Mochiko) and it’s ridiculously simple to make at home! You can probably find it at your grocery store or at an Asian grocer orrrr online. I used to always get them on my froyo but had no idea what they actually were. Have you ever tried mochi? Mochi are the weird little multicoloured chewy bits you see at all the froyo places. They’re creamy, lightly sweet, and have chewy bits throughout. The little bits of mochi in these popsicles makes me think of these Bugz popsicles I used to love as a kid! These matcha mochi strawberry popsicles are so refreshing and so fun. There are very few things that beat eating a frozen treat while in the sun or while hiding to recover from being ridiculously overheated. But popsicles make the heat so much more bearable. I can only last in the sun for a little before I just overheat and need to move into shade or jump in water. I like sunshine, but I really am not that great with heat. So having different popsicles in rotation is a must. Add a lollipop stick to each egg in the hole in the egg. Make sure your eggs are closed tightly, then carefully fill each Easter egg with the smoothie mixture. I’m not sure what the weather is like where you are, but it has been summer weather here this week. Using a chopstick or a pen, poke a hole in each plastic egg on the wider side of the egg.
